Body By Vi Challenge ~ Day 3

Today is day 3 of my Body by Vi Challenge... it's going really well. I'm feeling good. I've got a lot of energy, and my ring is starting to slip off my finger to the point where I'm getting a little worried I might lose it. Who knew when I had it sized up a couple years ago I'd really lose the weight!! WOO HOO.

This morning I put together a strawberry shake.

Strawberry Body By Vi Shake

StrawberryImage via Wikipedia
1 cup almond milk (I put in WAY too many solids and had to add more milk so my blender would work... can't wait to get a vitamix!!)
2 scoops shake mix
handful of frozen strawberries
handful of ice (I should have left the ice out!)

Whir it for a while... adding more liquid so it would actually whir.

The shake was pretty good, felt like it was missing something though. I gave part of it to my 5 year old because there was so much it wouldn't fit in my cup... she didn't really care for it. :(

Win some, lose some.

I made homemade potato soup for lunch today... so I skipped my shake and had soup instead, with a big glass of water.

Body By Vi Challenge ~ Day 2

Description: Coffee cortado (An latte art exam...                             Image via WikipediaWell, I stepped on the scale this morning and I'm down almost a full pound. woot. :)

I tried a new shake this morning... it was a bit of a fail, but at least now I know. :) I wanted hot coffee (it's freezing here).. so I tried making coffee and then mixing in the shake and some coconut milk (which I normally use in my coffee).

I thought it would be kind of  like a cappuccino ~ but it wasn't... kind of tasted like coffee with cake mix in it. :(

Oh well... I drank it anyway and look forward to another carrot cake shake for lunch. :)

Body By Vi Recipes ~ Carrot Cake Shake

Well, they don't call it the shake that tastes like cake for nothing I guess. I was a little leery about whether it would really taste as good as everyone says... but it does. :)

Today for lunch I wanted to get some raw food in so I used fresh juice for the base of my shake instead of milk or a milk product.

Here's how I created my Carrot Cake Shake.

6 or 7 whole carrots
2 red apples
2 scoops Body By Vi Shake mix
2 oz cream cheese (yes, I know it sounds crazy!)
dash cinnamon
dash of nutmeg
ice

I juiced the carrots and apples, and then poured the juice into the blender.
Added the cream cheese, spices and ice ~ whirred it up until smooth.

Pour and enjoy!

I can not believe how much this tastes just like carrot cake ~ with tons of raw veggie and fruit goodness. :)

Body By Vi Challenge Kick Off

I got my kit yesterday and today I'm getting started. I took my before picture and all my measurements. I'll be taking my measurements weekly ~ just to stay focused. I've been weighing every day... so I will probably continue that. I find it helpful to get back on track quicker if I start to slip (and with this being Halloween week ~ umm... there could be some slippage.) :)

Today I started this journey off at 160 pounds... and a BMI of 25.8 (which is a little into the overweight range)...

I started the day with a Peanut Butter Cup shake ~ which was delicious and I'm full and satisfied and ready to get to work. :)

Today's Body by Vi Recipe ~ Peanut Butter Cup

2 Scoops of Body By Vi shake mix
1 cup milk (I'm going to pick up almond milk today at the store...  I used 2% today)
1 chocolate body by vi flavor pack
1 Tbsp peanut butter
ice

Blend together in the blender, pour and enjoy!

This was a great first start because it really did taste wonderful. I just found a carrot cake recipe ~ which I think I'll try tomorrow so I can get some additional veggies in.
